Garbage Pizza

No, not literally.  This is what happens over the last few days before you are paid and you are trying to stretch the last $20 you have in your wallet.  Thankfully, you have flour in the pantry, a jar of yeast in the freezer and some olive oil on hand for the dough.  The toppings are where you begin to get creative.  Open refrigerator door:  hmmmm.

  1. Random jar of sun dried tomato spread = sauce
  2. Pepperoni  you didn’t eat on your camping trip = still good!  (it’s cured for goodness sake)
  3. Tomato = only had one so I couldn’t make sauce, sliced it up instead
  4. Fontina cheese = bought it for another recipe and never used it (whew!)

What’s that?  You’ve made enough dough for two pizzas?  Ok, cool.  Open freezer door too:

  1. Tiny container of homemade pesto from your neighbor’s basil plant = sauce
  2. Piece of steak you brought home from that restaurant the other day
  3. ½ container of grape tomatoes (also left from camping trip)
  4. Piece of Chihuahua cheese that you actually didn’t shred and put on top of your nachos two days ago (for whatever reason)

The inspiration:  having taught the Neapolitan Pizzeria class a few days before.  I love it when my job inspires me.

The outcome:  two completely different and delicious pizzas, which were equally as tasty the next day for lunch.

The moral of the story:  the next time your significant other asks you to clean out the refrigerator, ask her if she would like pizza for dinner.
